Fully Oxidized

A fully oxidized wine has been subjected to a prolonged, direct, deliberate oxidation process until no vestiges of the wine’s fresh fruit remain. Some producers, particularly on the island of Madeira, use heat to accelerate this process. Fully oxidized wines retain a longer shelf life after opening, as few if any delicate aromatics remain in the wine.
