1 oz high-proof bourbon

1 oz Henriques & Henriques Rainwater Madeira

1 oz Henriques & Henriques Generoso Doce 5 Year Old Madeira

2-3 dashes Angostura bitters

Garnish: orange peel

Stir/Strain/Garnish

Frothy Stars

Dry shake:

1.5 oz Henriques & Henriques Rainwater Madeira

0.75 oz half-and-half

0.5 oz maple syrup

1 whole egg

Shake again with ice.

Strain into a coupe.

Garnish with grated nutmeg

Garnish with grated orange zest.

Funchal, Four PM

Build in a highball glass filled with ice:

3 oz Henriques & Henriques Rainwater Madeira

3 oz tonic water

Garnish with lemon peel.

Jewel Thief

1.5 oz Amrut Cask Strength Indian Whisky

0.75 oz Henriques & Henriques Rainwater Madeira

0.25 oz Galliano Ristretto

1 tsp passion fruit liqueur

0.5 dash Scrappy’s Cardamom Bitters

Method: Stir

Glass: Fancy Double Old Fashioned

Garnish: Orange Twist, express & discard

Orchard Punch

Build in a punch bowl:

juice of 4 to 5 lemons

1 cup lemon oleo-saccharum (1 cup sugar, peels of 4-5 lemons)

Stir to dissolve.

Add:

1 bottle Hayman’s London Dry Gin

1 bottle Henriques & Henriques Rainwater Madeira

1 bottle dry sparkling pear cider

1 block of ice

Garnish with citrus fruit.

Garnish with rosemary.

Pheasant Pursuit

Stir with ice:

2 oz Henriques & Henriques Rainwater Madeira

1 oz Hayman’s London Dry Gin

1 dash Islay malt whisky

Strain into a coupe.

Garnish with a lemon peel.

Prince Henry’s Reed

Stir with ice:

1.5 oz Henriques & Henriques Rainwater Madeira

1.5 oz Dolin Dry Vermouth de Chambéry

1 dash orange bitters

Strain into a coupe.

Garnish with a lemon peel.

Quoit Club Punch

Build in a punch bowl:

2 cups lemon oleo-saccharum (2 cups raw sugar and the peels of 12 lemons)

juice of 12 lemons

Stir to dissolve.

Add:

1 bottle Smith & Cross Traditional Jamaican Rum

1 bottle cognac

1 bottle Henriques & Henriques Rainwater Madeira

1 block of ice

Royal Funchal Yacht Club

Shake with ice:

1.5 oz Henriques & Henriques Rainwater Madeira

0.5 oz orange liqueur

0.5 oz John D. Taylor’s Velvet Falernum

0.5 oz lime juice

0.25 oz simple syrup

Strain into a cocktail glass.

Garnish with a lemon peel.

Build in a double rocks glass filled with ice:

1.5 oz Cocchi Vermouth di Torino ‘Storico’

8 drops Bittermens Orange Cream Citrate

Garnish with a lemon peel.

Stir with ice:

1.5 oz Henriques & Henriques Rainwater Madeira

1.5 oz Dolin Rouge Vermouth de Chambéry

1 dash orange bitters

1 dash Angostura Bitters

Strain into a coupe.

Garnish with an orange peel.

Union Cocktail

Stir with ice:

2 oz Irish whiskey

1 oz Henriques & Henriques Rainwater Madeira

0.5 oz Amaro Meletti

1 dash orange bitters

1 dash Angostura Bitters

Strain into a coupe.
