Hayman’s Old Tom Gin is a rich and rounded style of gin that was the gin of choice in the 19th Century, made to the family’s original recipe as then produced. Relative to London Dry Gin, the Old Tom style imparts a more complex and flavorful taste experience, with a slight sweetness that pleasantly rounds out the botanical base. From the 10 Hayman’s botanicals, the Old Tom Gin emphasizes juniper and two types of cinnamon. Old Tom gin is the key ingredient in classic cocktails such as the Martinez, Tom Collins and Ramos Gin Fizz. Its depth and rich profile make for an ideal Aviation or French 75.

Old Tom Gin is the traditional gateway into gin and gin cocktails; its rounder, richer profile stands out in the simple drinks that launched the cocktail renaissance. Hayman’s Old Tom and soda (with lime to make a Rickey or lemon and sugar to make a Tom Collins) shows this depth easily. Add Rothman & Winter fruit liqueurs, Dolin Génépy or Cocchi Americano Rosa to a Tom Collins for little twist. Stir Hayman’s Old Tom with dry or blanc vermouth for a softer Martini that is rich even when ice-cold.

About Hayman Distillers

An original in their category, the Hayman family is the oldest gin-distilling family in London, having started their work in 1863. Company founder James Burrough was the great-great-grandfather of the current chairpersons, Miranda Hayman and James Hayman. Burrough was a true pioneer in the history of gin, innovating both process and profile. Not long after the Single Bottle Act of 1861, which allowed gin to be sold in bottles, Burrough set out to develop cleaner and more expressive profiles made possible with glass packaging. He employed a more expansive set of botanicals than his predecessors, and drew accolades as the first to employ citrus. The resulting profiles set a new standard that, for many drinks enthusiasts, remain benchmarks for traditional English gin.

From the earliest days, Burrough produced a variety of gin styles. There was a navy-strength gin that was procured by the Admiralty at the Royal Dock on the Thames. Highly prized was his Old Tom gin, the leading style of the Victorian era. A counterpoint to this was his ‘Black Cat’, a London Dry style. A variation on this London Dry was ‘Olde Chelsey’, named for the distillery’s location. Decades later, his company gained recognition overseas with a different London dry gin named to honor the palace guard. At the dawn of the cocktail revival in the early 2000s, the family once again drew accolades with the reintroduction of their Old Tom recipe.

All of Hayman’s historic gins maintain the same production methods and recipes from their inception over 150 years ago. The defining production methods of Hayman’s Gin include: use of three small copper-pot stills; 24-hour maceration of botanicals, for true concentration; and the use of 10 core classic botanicals in varying proportions depending upon style. About Gin/Gin Liqueur

Gin is a neutral spirit flavored with juniper and various botanicals, including coriander, angelica and lemon and orange peel. It is rooted in the 15th-century Dutch juniper spirit Genever, whose malt-forward character contrasts with descendant gins such as Old Tom (lightly sweetened, rounded) London dry (sharp, angular, dry), Plymouth (mild, flavorful), Navy (potent and intense) and New West/Modern (neo-classic to unique). Shake with ice:

0.5 oz Rothman & Winter Orchard Apricot Liqueur

0.5 oz lemon juice

Strain into a collins glass.

Top with 6 oz wheat beer.

Garnish with a lemon peel or dried apricot.

1.5 oz Dolin Dry vermouth

0.25 oz Bénédictine

2 dashes orange bitters
