About Honey & Lavender in France

A timeless expression of summer are the fields of lavender that extend from the Alps down through the Rhone valley and Provence to the sea. Records of its use date back to the 1st century AD when the Romans used it in textiles, perfumes, medicinal potions and even as legal tender. By the 19th century lavender became a staple in perfume production, and today France is a world leader in lavender essential oil production. Within the world of gastronomy, lavender is found in cocktails, lemonade, teas, chocolate and pastries. With over 45 different species and 450 varieties of lavender worldwide, selection is no simple matter. A cultural phenomenon, it is celebrated during annual summer lavender festivals throughout southern France.

Honey is a natural pairing with lavender, thanks to the bees that collect pollen from the blooms and transform it into a distinctively aromatic honey. Lavender honey has its own protected certifications in France (as does lavender essential oil) and is renowned for its bright, light hue and delicate floral notes. As natural compliments, the aromatics and texture of honey adds richness and depth to the bright floral notes of lavender.

About Dolin & Cie

Located in Chambéry in the heart of France’s Savoie (Auvergne-Rhone-Alpes), the family-owned Dolin is a historic producer of regional liqueurs and Vermouth de Chambéry. Dolin continues to make the authentic product according to the principles which earned Chambéry France’s only A.O. for vermouth back in 1932. This means production in Chambéry itself, maceration of real plants rather than pre-prepared infusions, and sweetening only by grape must, wine and/or sugar. Since its founding in 1812, the house of Dolin has produced a number of products from local herbs, including the legendary alpine liqueur Génépy. After a family transition in 1905 to now five generations of the Sevez family, the company remains proudly family-owned and independent. Full details

About Floral/Herbal/Amaro Liqueurs

Inhabitants of Europe's mountainous regions have made liqueurs with local flowers and plants for centuries. These include the fragrant, floral crème de violette as well as herbaceous and bitter liqueurs that started out as elixirs to aid indigestion and other ailments. The latter category includes amaro, meaning "bitter," in Italian. While they began as wine-based digestive aids, most modern amari are composed of spirits (usually neutral spirits), a proprietary mix of herbs and botanicals, and sugar or other natural sweetener. Always appropriate neat or with coffee after a meal, floral, herbal and amaro liqueurs also enliven many contemporary and classic cocktails. Full details
