The Old Tom style is typified by a rich and well-rounded flavor profile of botanical depth (as compared to the sharp, angular profile of London Dry) complemented by a light sweetness. While certain elements might along be aromatic or bitter, in combination they yield a depth of flavor and mouth-feel unique to the Old Tom style. The Hayman's Old Tom is characteristic of the late 19th century production cited in so many now classic cocktails.
About Hayman Distillers
The original company of Hayman Distillers
was founded in 1821 and acquired in 1863 by James Burrough, the great Grandfather
of the current Chairman, Christopher Hayman. James Burrough created the world
renowned Beefeater Gin. Although Beefeater Gin and James Burrough Limited
were sold to Whitbread in 1987, the Hayman family retained part of the business
and continued the tradition of distilling and blending Gin and other white
spirits.

Distilled and Bottled in the United Kingdom
Hayman's Old Tom Gin is a botanically intensive and
delicately sweetened style of gin that delivers a balanced and well rounded
flavor profile, resulting in a distinctive and authentic cocktail experience.
Popular in the 18th and 19th century, Old Tom Gin was specified in the recipes
of numerous classic gin based cocktails. It provides a balance and nuance
unique to its style.
Hayman Distillers is the longest serving family owned gin distiller in England.
Hayman's Old Tom Gin is made under the careful supervision of Christopher
Hayman with a recipe drawn from the family archives.
The re-introduction
of Hayman's Old Tom Gin came by request of the London cocktail community,
interested in having the full spectrum of gins as specified in the recipes
of so many classic cocktails. As the authors of these recipes were deliberate
in their selection of the style of gin, so too today we find the different
styles of gin meaningfully impact the cocktail.
